The Institute of Horticulture had developed a recipe and produced lilac flower jam specifically for sale to visitors of the Dobele Lilac Garden. "If we make it ourselves at home, decorate cakes with lilac flowers, or prepare various desserts or wine, we take responsibility for ourselves."

Since 1997, the European Commission has maintained a Novel Food Catalogue, which serves as a recommendation. However, European regulations refer to this catalogue. Lilac flowers are not included in the catalogue's list of edible plants.
